Summary: "Budget" knife suitable for professional chefs or cooking fanatics on a budget. Fantastic bang for the buck for heavy duty, commercial grade knives. Highly rated in Cooks Illustrated.
Although I have a set of Trident forged knives. I jumped at the chance to check out these knives since some of the specialty knives in this set (Granton Santoku and the flexible filet) will be a welcome addition to my collection. Some years ago someone told me that Victorinox / Forschner are the most popular knife in culinary schools due to their bang for the buck - considered the best performing knives for the cost.
I am not disappointed. These knives are extremely sharp, right out of the box. The handles are nicely molded and feel solid. The blade thickness varies between the blades, and tapers from the handle down to the tip, clearly indicating that they do a lot to these knives after the stamping process - although the 8" chefs is a stamped blade, it still feels...Read more

Victorinox forged knives have long been associated with professional level knives and have been priced accordingly. This stamped blade Fibrox line provides a not so deep pocketed alternative for home chefs on a budget.
Stamped knives are less expensively produced compared to forged. Generally, when comparing same sized knives, a stamped knife will have less heft and a thinner non-cutting edge. Purists insist that forged knives stay sharper longer and can take more abuse. Victorinox stamped knives are not as good as Victorinox forged, but they are still high quality.
Individually, you could purchase (what I consider to be) the important pieces of this set, except for the shaping knife, for just a little less than $200. These knives are: Paring (2); Utility; Boning; Santoku; Chef's (2); Carving, Slicing and Bread. I could not find the Shaping knife available individually in the Fibrox line.
