Excellent price and a fine instrument,

For years I never owned a cleaver and then I saw Julia Child using one and a butcher friend recommend this one. It holds its tone or sharpened blade longer and I can whack a whole chicken and then use my boning knife and do the job in less than ten minutes.And this cleaver is great for quickly dicing vegetables for stir fry. The handle is a nice weight and the blade is designed to allow me to dice-rock at a nice speed. Like I said I never owned or thought I needed a cleaver, then I was proven wrong when I bought this one.

Most cleavers I've owned tend to be top-heavy and unbalanced, but this one has a wonderful, natural heft to it which allows you to precisely butterfly a whole chicken in less than four strokes (not counting the removal of the chest bone). Fantastic!

I bought this product for my wife, who routinely chops up chicken. Previously she used some of those "permanently shrarpened" type chef's knives for the task, and they simply weren't up to the task-the bones just destroyed the edge in no time. The Henckels cleaver makes short work of them now, and she loves it!
