Any serrated steak knife I have ever used or owned has been better suited for sawing and hacking meat than for slicing, and most of the inexpensive steak knives are too flimsy to make a confident slice. For the past year or so I've had my eye on a beautiful set of Japanese steak knives, but at over $800 for eight I had yet to pull the trigger. In the interim, I decided to try these Chicago steak knives and was surprised by how much I like them. They have a solid weight to them, a stiff sharp blade, and a great overall balance and feel. The blade glides through steak and there is no wobble that you tend to get on most knives that go for under $200 for 4. It's an attractive design as well, and my only complaint is that the wood walnut handle is on the dry side. But at under $30 for four, oil the handles a few times and enjoy a quality knife at 1/10th the price of a comprable option.
