Set (Kitchen) My GF and I were convinced to try out the 5" Santoku, when we found one on a "blemish" special at the Calphalon outlet near her parents house last summer. I think we paid $10 for the knife, and at that price I figured even if it was crap, it would at least look purdy on the knife rack. Super-sharp out of the box! As with other reviewers of the Katana series I would say that they are a bit high-maintenance, but if you take care of it, like you should with any halfway decent knife, you won't have many troubles. One concern is the "Damascus Steel Design"of the blade. After we got the knife home upon my anal-retentive inspection I figured out why it had been on such a discount. The pattern on the blade is printed on, not real rolled Japanese steel. Not a huge suprise at this price point, but thought I point this out. Also, don't use any thing super abrasive, as the printed lettering on the blade has definitely worn of form using 3M scotchbrite dishwands. By Amazon Verified Purchase(What's this?) On some things it was just too cumbersome to use effectively so I bought this smaller combo. The knives come very sharp right out of the box and keep a nice edge. Sharpening is easy and the blades hone up beautifully. The style may not be for everyone but I like the ergonomics of the handle. The blade must be kept clean and dry as it will spot if any water is left to dry on it. I love these knives and believe they`re a great set for the household. I would definitely buy them again. I'm a pincher when it comes to how I grip my knives and the rounded edges and extended bolster make it very comfortable. I would try these knives. Go some where and hold a Calphalon Katana knife. You will see a difference. Extremely sharp.
